Ingredients:

Fresh red chillies – 100 gms
old oil-100 ml
ginger-garlic paste -1 tbsp
onion (chopped fine) – 50 gms
mushroom – 200 gms
cornflour 1 tbsp
flour – 2 tbsp
baking powder – a pinch
oil 10 drops
soya sauce -1 tsp
tomato ketchup – 1 tbsp
salt/pepper to taste
Ajinomoto – a pinch

Method:

1. First make a basic chilly sauce by grinding the chillies to a fine paste.
2. Heat the old oil to a smoking point and sear the paste and mix till all the chillies have been seared. Set aside and leave to cool.
3.Make a batter using the 2 tbsp flour, 1 tbsp cornflour, baking powder and a little water to make a coating batter.
4. Sprinkle a little salt and pepper onto the cubes of paneer or washed and dried mushroom.
5. Mix in the batter and deep fry them in medium hot oil, till golden brown. Set aside.
6. In a separate pan, add a little oil and sauté the ginger-garlic paste, chopped onions and add 2 tbsp of chilli sauce and sauté well.
7. Add 150 ml water and bring to a boil, add the soya sauce and tomato ketchup.
8. Thicken with 1 tbsp of cornflour dissolved in water. Add the fried paneer or mushroom in gently and serve immediately.
